On this Oaxaca Gastronomic Route, you will visit traditional cooks who will not only teach you the process of making unique foods from the region, such as cheese, Oaxacan quesillo, chocolate, tamales, and pan de cazuela, but you will also be able to prepare some of these dishes yourself. First, you will visit a traditional cook who will teach you how to make cheese and quesillo step by step until you achieve the desired texture and flavor. Later you will visit the next traditional cook who will teach you the process of making tejate, a traditional drink prepared from cocoa, mamey, cocoa flower and corn. You will taste this ancestral drink and then you will make the traditional mole tamales made with banana leaves and totomoxtle (corn leaf), and later eat them accompanied by a delicious chocolate water, a drink that will be prepared while the tamales are being cooked. Finally, you will visit Tlacolula de Matamoros, a town where traditional pan de cazuela is made with chocolate, cinnamon, and raisins. You will also have the chance to eat this delicious bread with chocolate water.
